Pepper and salt

ORIGIN: Nepal

Also known as Sansho or lemon pepper for its lemony as well as lusted after touches.

USAGE: Ingredient of the 5 Chinese spices or the 7 spices of Japan. Toast lightly before use.

ORIGIN: Spain

USE: Sea salt for food, recommended for salting, cooking meat, fish and seafood in salt (baking). For salting food or as a preservative.

ORIGIN: Sumatra- Indonesia.

It was introduced in Europe before the other peppers, which were later displaced. Also known as Java pepper.

USE: Can be combined in stews, winter soups or with goat cheese.
