It offers a minty, fresh, mildly spicy flavour and intense aroma.
USE: This pepper is low in heat. It can be rehydrated for use in broths, soups and stews. For flavouring oils, sauces and in brine.
Malabar green pepper is obtained when the fruit is quite green, dried by freeze-drying and then macerated. It has pleasant fruity notes that make it interesting for desserts.
Examples: Pepper beef stew, chicken with chickpeas, hake in green pepper sauce, etc.
